What Am I Supposed To Do With All This Zucchini?


In the late summer, early fall our zuchini plants are in full swing.  It seems like we’re picking a zucchini a day.  So what are we supposed to do with all that Zucchini?  Here are a few of our favorite recipes from around the web:



Food Networks Zucchini Parmesan Crisps are delicious!  Even my anti-zucchini eater will chomp these down.  We like to dip them in ranch, marinara, or onion chip dip.

Zucchini Quesadillas is a quick easy way to add zucchini to a family favorite.  I like to add a little grilled chicken to ours as well.  edf_zucchiniquesadilla0303_vert

I love having a lot of great recipes on hand this time of year.  Try these when you have zucchini’s coming out of your ears!  If you still end up with more zucchini’s than you can possibly use, puree them in the blender and freeze them in freezer bags for zucchini bread in March.
