Is there anything more comforting that soup? When you get tired of the usuals, try this:
Black Bean Tortilla Soup
1 can 15 oz drained black beans
1 can 15 oz corn
1 jar 15 oz salsa (heat level of your choice)
2 cans 10 oz canned chicken (or 1 cup cooked, diced chicken breast)
3 cans 14.5 oz chicken broth
Simmer together for at least 30 minutes. Great for a slow cooker.
Garnish with tortilla chips, fresh avocado and a sprinkle of cheddar cheese.
